This recipe appeared in the Summer 2007 issue of Texoma Living!.
– 1 Angel Food cake loaf
– 6 large strawberries, stems removed, sliced in half
– 2-4 oz. cartons fresh blackberries
– 1 cup fresh pineapple, 2-inch cubes
– ½ stick of butter
– 2 cups brown sugar
– ¼ cup white wine
– 1 tsp. ground cinnamon
– ½ tsp. ground nutmeg
– 1 tsp. pure vanilla
In a large skillet or medium pan, melt butter over medium heat. Add all fruit. Stirring occasionally, cook for 2 minutes. Add sugar, wine, and spices. Stir well. Lower heat and simmer for 3 minutes. Remove from heat. Pour the sauce over the cake or spoon some of this summer delight over ice cream. Be creative with this one! Use your favorite fruits and nuts. Perfect for late night summer dining.
