Spinach Salad a la Rive Gauche

Full of flavor and easy to make. This spinach salad will surprise your guests with a colorful and flavorful mix of greens and a little spice.

3 bags fresh spinach, washed and trimmed
½ cup bacon drippings
3 tablespoons olive oil
½ cup shallots, minced

½ cup tarragon vinegar
3 tablespoons Creole mustard
2 tablespoons sugar
1 tablespoon Worcestershire sauce
1 ½ cups sliced mushrooms
1 cup bacon bits
¼ cup brandy
Salt, pepper

To a large sauté pan add bacon drippings and olive oil, heat over medium to high heat, and add bacon bits and shallots. Sauté until shallots are golden brown. Add mushrooms and all other ingredients, reserving brandy. Mix well, and then add brandy. Place spinach in large serving bowl and pour hot dressing over spinach and toss.
