1 pound smoked white turkey, cubed about 1 inch thick
30 ounces (2 cans) white beans with juice
1 cup red pepper, diced
2 tablespoons extra virgin olive oil
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
In a medium pot over medium-high heat, saute turkey and red pepper in extra virgin olive oil and spices. Cook for 5 minutes, stirring often. Lower heat and add both cans of white beans. Stir to incorporate. Simmer over low-medium heat for 10 minutes. Serve hot.
