Turkey Pesto Avocado Croissant

Makes 4 sandwiches

– 4 large croissants, sliced into halves
– 1 pound smoked turkey, sliced thin or shaved
– 1 (6-ounce) jar pesto spread
– 1 large avocado, sliced thin tomato, red onion, and cucumber

Spread both sides of the croissant with pesto, about 1teaspoon per side. Top pesto with sliced smoked turkey. Top turkey with sliced avocado. Cut in half and serve with a side of diced tomatoes, sliced red onion, and cubed cucumber.
