White Fish à la meunière with Strawberry Salsa

- 6 white fish fillets (tilapia, orange roughy, any firm white fish)
- ¼ cup all purpose flour
- 3 tablespoons olive oil
- Pinch of Kosher salt and white pepper
Heat oil in skillet over medium heat. Place flour in large dish and season with salt and pepper.
Dredge fish fillets in the seasoned flour, shaking off excess flour to leave a light coating. Place the fish fillet in hot oil and brown on each side approximately 3 minutes. Do not crowd pan. Arrange fish on plate and top with Strawberry Salsa.
Strawberry Salsa
- 1 pint fresh strawberries, stemmed, cored and cut in quarters lengthwise
- ¼ cup chopped fresh cilantro
- ¼ cup chopped red onion
- 1 seeded, chopped jalapeno pepper
- 3 tablespoons honey
- 1 lime
Mix all ingredients well. Store in refrigerator until ready to use.

Hagerman Wildlife Photographers

Hope says the longhorn’s size (1,500-1,800 pounds for a cow and as much as 2,100 pounds for a bull), and long sharp-pointed horns make the breed look menacing, but they’re not. “They are gentle and docile, not at all rough and aggressive, but watch out for those horns,” Hope chuckled.
Angel Iris Farm
They are yellow, pink, blue, orange, purple, white— even black. They dance in the wind like fairies, their arms over their heads, the breezes blowing their ruffled gossamer dresses— the most beautiful of all flowers, the iris. When the Dallas Iris Society takes its annual bus tour on April 27, one of their stops will be Angel Iris Farm on Luella Road in Sherman.
