Grilled Sweet Potato Wedges
Sweet and simple. They taste good and look even better. Add to any meal for a more colorful table.
Grilled Sweet Potato Wedges
(Serves 8)
4 fresh sweet potatoes
butter
brown sugar
¼ cup honey
Place washed sweet potatoes in pan and cover the them completely with water. Bring to a boil and cook until almost done (about 20 minutes). Remove potatoes from water with tongs and allow to cool completely. When completely cool, cut the potatoes lengthwise into 4 wedges. Heat grill or grill pan on stove top. Brush grill with olive oil. Place potato wedges on hot grill long enough to get a grill mark. (Everything can be done ahead of time to this point). After grilling all the potato wedges place them on a cookie sheet. Brush with honey. Sprinkle with brown sugar. Place under broiler until sugar melts.
